In a microwave safe bowl, melt the compound chocolate. You want to do this slowly, 30 seconds at a time, stirring thoroughly in between each heating. The bowl retains some heat and will continue melting the chocolate as you stir. You want to be very careful to not burn your chocolate.
Most grocery stores do not carry toasted coconut, so buy sweetened coconut & toast it yourself
To toast the coconut, pour the coconut onto a large skillet or fry pan. Turn the stove top onto medium heat and stir occasionally. The coconut will become golden and toasted. Once toasted to your desire, remove.
Slowly pour in about a cup of the toasted coconut into the melted chocolate at a time. Stir to combine. Repeat until all the coconut is added.
You can pour the chocolate into molds or you can spoon little puddles onto a parchment paper.
