These honey glazed carrots are roasted to perfection and topped with whipped feta and crunchy pistachios for a sweet, savory, and irresistible side dish.

2lbscarrots
2tbspolive oil
1/4cuphoney
5sprigsthyme
1tspfine sea salt
1/2tspground pepper
Topping
8ozfeta block
3/4cup Greek yogurt
1lemonzested
2tbspolive oil
1/4cupcrushed pistachios

Instructions
Preheat your oven to 400 degrees F.
Wash and chop the carrots into thick chunks.
Drizzle 2 tbsp of olive oil on a light-metal colored cookie sheet.
In a mixing bowl add 1/4 cup honey, 1 tsp salt ,1/2 tsp pepper and the leaves of 5 thyme sprigs. Toss the carrots in the mixture bowl to cover them evenly.
Place on the prepared cookie sheet and bake for 25 minutes or until tender. Remove and add whipped feta and pistachios before serving.
Toppings
In a blender or food processor, add feta, Greek yogurt, lemon zest, and olive oil. Blend until smooth. You may have to stop a few times and scrape the sides of the blender to make sure it whips smoothly.
Top the roasted carrots with the whipped feta and then the crushed pistachios. Serve warm.
