This frozen peppermint dessert is a quick, simple, no bake dessert from my childhood. It was always the favorite at the Robinson family Christmas parties.
Combine 2 cups heavy cream, 1/2 cup powdered sugar, and 1 tsp vanilla extract in a standing mixer with the whisk attachment. Whip on high until you reach a stiff peak
While the whip cream is mixing, put the package of Oreos in a ziplock bag and crush with a rolling pin. Stop the cream when done and set aside.
Melt the 4 tbsp unsalted butter and mix the Oreo bits and butter together. Pour the buttered Oreo crumbs into a greased or parchment-lined cookie sheet. Reserving 3/4 cup of Oreo for the top.
Take another ziplock bag and crush 1 cup of peppermint candy canes or candies until fine with the rolling pin.
Fold the crushed peppermints and 2 cup mini marshmallows into the finished whipped cream
Pour the peppermint whipped cream mixture on top of the Oreos that are spread out on the greased cookie sheet.
Use the back of a wooden spoon or rubber spatula to spread the mixture out until it covers the whole cookie sheet
Sprinkle the remaining 3/4 cups of Oreo bits on top of the dessert
Cover the finished dessert with tinfoil and place in the freezer for at least 2 hours before serving, or even better, make the day before you serve so that the dessert can freeze overnight.
