16ozbrie (two 8 oz wheels)
1/4cupolive oil
4tbsphoney
1tbspflakey salt
2sprigsfresh rosemary

Remove the brie from the fridge, cut the rind off by slicing the tops and bottoms off of the wheels while still cold. Chop the brie into cubes.
Place the brie cubes in your standing mixer bowl, set aside, and let the cheese sit for 10 minutes to come down to room temperature.
Once the cheese has warmed up, add 1/4 cup olive oil to the bowl and turn the mixer on medium-high with the paddle attachment. Beat for 5-8 minutes, scraping down the sides of the bowl occassionally. Stop beating as soon as it is fluffly.
Scoop the whipped brie onto a serving plate, drizzle on honey, sprinkle with flaky salt, and garnish with rosemary.
