These sweet, buttery cornbread muffins are ready in just 30 minutes! Perfectly moist with a golden top, they pair well with any meal or stand alone as a treat.
In a mixing bowl, combine until smooth 1 1/2 cups all-purpose flour, 1 1/2 cup cornmeal, 1 cup granulated sugar, 1 tbsp baking powder, 1 tsp baking soda, 1 tsp fine sea salt, 1/2 cup melted butter, 1 1/4 cup buttermilk and 2 eggs.
Pour the batter evenly into 20 muffin cups, and place in the oven. Bake for 20-23 minutes or until the internal temperature is 200 degrees F.
