These crispy smashed potatoes are baked with melty brie, tangy cranberry sauce, and buttery herbs. This is perfect for holiday appetizers, babyshowers, or side dishes!

8small potatoes
1/2cupunsalted butter
1 tbsp olive oil
1 tspfine sea salt
1tspgarlic powder
1tsp onion powder
1/2tsp ground pepper
1cancranberry sauce with whole berries

Instructions
Place a large pot of water on the stove over high heat and preheat the oven to 400 degrees.
Wash the potatoes and cut into fourths.
Place them in the pot of hot or boiling water and allow to cook for 20 minutes.
In a small bowl, microwave and the 1/2 cup unsalted butter.
Whisk in the 1 tsp fine sea salt, 1 tsp garlic powder, 1 tsp onion powder and 1/2 tsp pepper to the melted butter.
Remove the potatoes after boiling and place on a cookie sheet.
Using a large cup, carefully smash each potato down as flat as you can.
Drizzle on the 1 tbsp olive oil and then drizzle on the butter mixture.
Top each potatoe with a spoonfull of cranberry sauce and a bit of brie
Place in the oven and bake for 30 minutes.
Remove and allow them to cool for 5-10 minutes before serving. Top with chopped chives. Enjoy!
