This soft and airy strawberry pie is cheesecake-like but has a light, fresher feel and flavor. Inspired by the MonkeyPod Kitchen in Maui.
Ingredients
Crust
1 1/2
cup
graham cracker crumbs
**about 13 cracker sheets

tbsp
unsalted butter
**melted

tbsp
brown sugar

heavy whipping cream

tbsp
strawberry jello box mix

ounces
cream cheese
1/2
cup
powdered sugar

tsp
vanilla extract
sliced strawberries

Crust
Preheat your oven to 350 degrees
Chop up the graham crackers in a food processor
Add the melted butter and brown sugar, mix until combined
Press into the bottom of a pie dish that has been sprayed with non-stick spray
Place in the oven and bake for 10 minutes. Once done, remove and allow it to cool down.
Pie
In a medium size bowl with a hand mixer, whip the heavy cream and strawberry jello mix until it reaches stiff peak
In a seperate bowl mix the cream cheese, powdered sugar and vanilla with the hand mixer until fully combined.
Pour the cream cheese mixer into the whipped cream mixer and whip until combined.
Pour the mixture into the cooled graham cracker pie crust. Cover with plastic wrap and place in the fridge to set for 2 hours
Once set, remove from the fridge and cover in sliced strawberries. Enjoy!
