Start by peeling and boiling your sweet potatoes. Place a large pot of water on the stovetop over high heat. While the water warms up, peel and chop your sweet potatoes into 2-inch squares.
Pour the sweet potatoes into the hot water and allow to boil until softened, about 20 minutes. Once softened, drain the potatoes and place back into the hot pan, but not over heat on the stove.
Pour 1 tsp fine sea salt, 1/2 tsp ground pepper, 1/2 cup softened unsalted butter, 1 tsp minced garlic, 1/4 cup whole milk, 1/2 cup sour cream, 1/2 cup shredded parmesan cheese, .25 oz chopped chives, and .25 chopped sage over the cooked potatoes. With a potato masher, mash and mix the potatoes with the toppings. Once the potatoes have reached a soft, whipped texture, they are ready to serve.
