Cool off with these no-bake Strawberry Shortcake Icebox Bars! Layered with sweet berries, whipped cream, and graham cracker crunch, perfect for summer.
Start by washing and chopping lb. of fresh strawberries. Sprinkle 1/2 cup of granulated sugar on top, stir until the berries are coated evenly. Set aside and allow the sugar and juices to create a syrup while you prepare the other ingredients.
In a medium-sized mixing bowl add 2 cups of heavy whipping cream, 1 tsp vanilla extract, and 1/2 cup powdered sugar. With a hand mixer whip until stiff peaks form. Set aside.
In a hand food processor, add 16 graham crackers and chop into a fine crumb. Add 1/4 cup brown sugar and 6 tbsp melted butter. Stir until the crackers are coated and it looks like a wet sand.
In a 9x13 pan lined with parchment paper, lay down a single layer of Ladyfingers. Top with the strawberries and syrup. Spoon on the whipped cream and spread until smooth. Sprinkle on the graham cracker mixture until evenly coated. Place the pan into the freezer and freeze for at least 4 hours or until set.
When ready to serve, remove from the freezer and cut into even sized bars. Enjoy frozen!
