Instructions
Start by preheating your oven to 400 degrees and spraying a light metal colored cookie sheet with non-stick spray.
Wash and chop the Yukon potatoes into 4ths
Mix the topping in a large bowl: 2 tbsp olive oil, 2 tbsp minced garlic, 2 tbsp fresh parsley, 2 tbsp thyme, 2 tbsp rosemary, 2 tsp fine sea salt, and 1 tsp black pepper.
Toss the chopped potatoes in the topping and spread them out on the prepared cookie sheet.
Bake in the preheated oven for 45 minutes. Remove and allow to cool for 10 minutes before serving.
