Few side dishes satisfy like a tray of golden, crispy roasted garlic herb potatoes. Earthy, buttery Yukon golds are tossed with fresh garlic, parsley, thyme, and rosemary, then roasted until perfectly caramelized – it’s an easy and delicious upgrade to any dinner table. Whether you’re serving roast chicken, a juicy steak, or brunch with eggs, these oven-roasted potatoes bring comfort and flavor to every bite. Best of all? They require just a handful of ingredients, a sheet pan, and a bit of room-temperature love.

These roasted beauties go by many names: oven-baked herbed potatoes, crispy roasted potatoes, garlic rosemary potatoes, and even sheet-pan potato recipes. Whether using baby potatoes, russet, or sweet potatoes, the key is in the herb mixture, proper oiling, and single-layer roasting.
The Chemistry of Roasted Garlic Herb Potatoes
To achieve that coveted extra-crispy edge, it’s all about the high-temperature, single-layer roasting method. Yukon gold potatoes are ideal thanks to their thin skin and naturally buttery texture. Tossing them in extra virgin olive oil helps prevent sticking and promotes browning, while herbs like fresh thyme and rosemary release aromatic oils during roasting. To avoid steaming, always ensure your prepared baking sheet isn’t overcrowded- this promotes maximum crispiness.

Recipe Troubleshooting
Have you ever ended up with soggy potatoes? That’s usually from too much moisture or crowding the sheet pan.
If your potatoes are soft and mushy, it’s likely due to overcrowding, which causes excessive steam.
Another issue is burnt garlic– fresh garlic needs to be mixed well with oil and potatoes to avoid direct heat contact.
If you use a dark pan, you are more likely to burn and overcook your potatoes.
Potatoes can also stick to the pan if there’s not enough oil or if you skip the parchment paper.
Using dried herbs instead of fresh ones can result in a muted flavor and over-roasting if they are not added at the right time. I would recommend fresh herbs over dried ones.
If you use dried herbs, your herbs might turn brown and become less effective.
What herbs pair best with roasted potatoes? My top three are parsley, thyme, and rosemary.
If the potatoes were too greasy or bland, then your measurements were probably off. Try to stick to the recipe.
How do I make crispy garlic herb roasted potatoes like restaurants? Easy! Follow the recipe below and be sure not to overcrowd the pan, as this can cause excessive steam and moisture.
Can I use red potatoes or fingerling potatoes instead of Yukon gold? Yes, but the flavor will be different. Yukon is my favorite for this recipe- they are buttery and delicious.
Should I parboil the potatoes first? Not necessary! You can cut and throw it right in the oven.
Can I prep this side dish ahead of time? Yes, you can prepare and place it in an airtight container in the fridge, and then bake it when ready.
What’s the best way to reheat leftover potatoes to achieve the same crispy finish? To reheat, place them in the oven at 375°F for 10-15 minutes.
How much olive oil is enough? You only need 2 tbsp per sheet pan.

Serving Suggestions
Perfect for every occasion, these potatoes shine as a holiday side dish during Thanksgiving, Christmas, and Easter. They’re also trending on TikTok for their versatility in gluten-free holiday recipes, comfort food bowls, and meal prep containers. With the rise of air fryer hacks and easy dinner sides, roasted garlic herb potatoes are a spring herb staple.
Pair with grilled steak, roast chicken, or baked salmon. Serve in a rustic bowl garnished with more fresh parsley or thyme. Sprinkle with parmesan cheese or serve with garlic aioli. Great as a brunch side with eggs and sausage. Layer in a sheet pan dinner with green beans or baby carrots. For an elegant touch, plate with roasted lamb or duck breast.
Want to elevate this side? Serve with a drizzle of garlic butter alongside juicy steak or herb-roasted chicken. For a vegetarian plate, pair with grilled veggies or stuffed bell peppers. Add a dash of smoked paprika or a sprinkle of parmesan cheese just before serving for that restaurant-quality finish.

Storage Tips
Store leftover potatoes in an airtight container in the fridge for up to 4 days. Avoid storing them while they are hot; let them cool at room temperature first.
Freezer– Completely cool potatoes and place them into a freezer-safe bag or containers—freeze for up to 1 month. Reheat directly in an air fryer basket or oven to regain crispness.
Making Ahead– Chop and toss the potatoes in advance, then refrigerate them in a sealed container. Roast right before serving for the best texture. You can also roast ahead and reheat on a prepared baking sheet at 375°F for 10-15 minutes.
