Bake a cozy loaf of banana oat toffee bread, packed with gooey toffee chips, warm cinnamon, and sweet ripe bananas. This is perfect for breakfast, desert with ice cream, or a party!
Preheat your oven to 375°F. Prepare a light-metal colored bread pan by spraying it with non-stick spray and lining it with parchment paper.
In a small bowl, mash 3 over-ripe bananas.
In a large mixing bowl, add the wet ingredients: 1/4 cup whole milk, 6 tbsp melted butter, 2 eggs, 1 tsp vanilla extract, and 3 mashed bananas. Stir with a wooden spoon until the mixture is well combined.
Pour in the dry ingredients: 1 1/2 cups all-purpose flour, 1 cup oats, 1/3 cup granulated sugar, 1/4 cup brown sugar, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp ground cinnamon, and 1/4 tsp salt. Mix until a shaggy batter forms.
Fold in 1 bag of toffee chips.
Pour the batter into the prepared bread pan. Place in the oven and bake for 60 minutes.
Remove and allow to cool for at least 20 minutes before slicing.
