Ingredients 

  • 1 1/2 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1/4 cup whole milk
  • 6 tbsp melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 ripe bananas
  • 1 bag toffee chips

Instructions

  • Preheat your oven to 375°F. Prepare a light-metal colored bread pan by spraying it with non-stick spray and lining it with parchment paper.
  • In a small bowl, mash 3 over-ripe bananas.
  • In a large mixing bowl, add the wet ingredients: 1/4 cup whole milk, 6 tbsp melted butter, 2 eggs, 1 tsp vanilla extract, and 3 mashed bananas. Stir with a wooden spoon until the mixture is well combined.
  • Pour in the dry ingredients: 1 1/2 cups all-purpose flour, 1 cup oats, 1/3 cup granulated sugar, 1/4 cup brown sugar, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp ground cinnamon, and 1/4 tsp salt. Mix until a shaggy batter forms.
  • Fold in 1 bag of toffee chips.
  • Pour the batter into the prepared bread pan. Place in the oven and bake for 60 minutes.
  • Remove and allow to cool for at least 20 minutes before slicing.
