Cut the brioche bread in 1-inch slices.
In a mixing bowl add 8 ounces cream cheese, 3/4 cup powdered sugar and 1 tsp vanilla extract. Whip with an electric hand mixer until combined and smooth.
Fold in 1 cup of fresh mixed berries. I used whole raspberries, whole blackberries, and chopped strawberries.
Make cream cheese sandwiches with the mixed berry cream cheese mixture and two thick slices of brioche bread.
In a shallow bowl, whisk together three eggs, 1 cup milk, 1 tsp cinnamon, and 1 tsp granulated sugar.
Place a frypan on the stovetop over medium heat. Allow it to warm up.
Grease the pan with non-stick spray or butter.
Dip a brioche sandwich in the egg mixture on both sides.
Place the soaked sandwich on the frying pan. Cook until for a few minutes, then flip and cook a few more minutes. Before getting the sandwich off the frypan, using a spatula, carefully flip the sandwich around on its four edges to seal the French toast.
Remove and cook and repeat until all 8 sandwiches are cooked.
Serve while warm with syrup, powdered sugar or whipped cream.
