In a medium-sized saucepan, add the butter and allow it to come to a boil. Once it is boiling, keep an eye on it. As soon as the butter froths up and stops making popping sounds, it is done and browned. If you stir the butter, you should see small brown flecks.
Add the 16 ounce mini marshmallows and stir until they are fully melted.
Pour the melted marshmallow mixture over the measured out cereal. Stir with a large wooden spoon until the cereal is covered.
Add the additional 8 ounces of mini marshmallows and fold them into the cereal mixture.
Pour the cereal treat out onto a large parchment paper. Press down to flatten to the thickness you desire.
Allow the treat to cool a bit before slicing into 16 rectangles.
In a microwave safe bowl add the 2 cups white chocolate chips and cook for 30 seconds in the microwave. Stir, repeat and stir again until smooth.
Dip the top of each rice krispie treat in the chocolate and carefully press a peep on top.
