Few desserts scream summer indulgence quite like Chocolate Ice Cream Sandwiches– a nostalgic favorite with a next-level homemade twist.

If you’re dreaming of a frozen chocolate dessert, this one’s for you. These chewy cookie ice cream sandwiches blend chocolate custard and the best cookies into an amazing summer dessert. It will blow your mind!
The Chemistry of Chocolate Cookie Ice Cream Sandwiches
Creating the ideal ice cream cookie sandwich is all about texture and temperature. You need soft cookies- think extra egg yolk, brown sugar for chew, and just enough softened butter to hold it all together. The dry ingredients, including cocoa powder and flour, must be blended gently to avoid overworking the dough, ideally using a stand mixer with a paddle attachment on low speed. For the frozen custard, slow churning and a room temperature base create a creamy, scoopable texture that won’t form ice crystals. The result? Ice cream that holds its shape between cookies- no more melting down your arm!

Recipe Troubleshooting
Melting sandwiches? If your scoop of ice cream isn’t frozen solid, it’ll run before you even press the second cookie down. The key is to freeze your ice cream circles on a sheet of parchment paper placed on a cookie sheet for at least a few hours before assembling.
Cookies too hard? Use a chewy cookie recipe with brown sugar and avoid overbaking.
Frozen custard has ice crystals? It may not have been churned properly or cooled enough beforehand.
Can I use store-bought cookies? You can, but nothing beats the flavor and texture of homemade.
What’s the best cookie texture? Think chewy, soft cookies that won’t break when frozen.
Frozen custard isn’t creamy? Make sure your custard is chilled completely before churning.
Serving Suggestions
Wrap each sandwich in parchment paper and store on a cutting board in the freezer. For parties, line a tray with ice packs and arrange sandwiches like cookies at a bake sale. For an extra flourish, roll edges in mini chocolate chips, rainbow sprinkles, or crushed nuts. Add to a dessert bar with different flavors like my delectable Biscoff frozen custard or my creamy homemade vanilla custard. Want to space it up even more? Drizzle my buttery salted caramel sauce over the top for a beautiful and delicious touch. Some of my favorite drinks to pair this with are an ice-cold glass of milk or the best homemade horchata on holidays like Cinco De Mayo. Dip half in melted chocolate or homemade fudge sauce then freeze again.
