Let me break it down for you with each meal –

Tzatziki Turkey Meatballs & Couscous Bowl

I am going to be honest, I was worried immediately at the title, turkey meatballs. I am not the typical ‘healthy eater’ and I much rather eat what tastes good over what is healthy. Let me tell you though, they were delicious! What I did not know going into it, but it turned out really nice on busy days, the meat all comes pre-cooked.

The meatballs dipped in that creamy tzatziki sauce tasted incredible. It came with broccoli, which the recipe told me to steam. I prefer to bake it, with a little olive oil and salt in the oven at 400 degrees F for 20 minutes, so I did that instead. It gets crispy on the outside and tender on the inside, the flavor is deliciously savory and doesn’t make your house smell like steamed broccoli. Win, win.

Cheesy Chicken Tostada & Corn Salsa

The pre-cooked, seasoned and shredded chicken made this dinner a simple meal. The corn salsa was so flavorful and I felt very satisfied. I would definitely eat it again. It only takes 12 minutes to make, start to finish.

Extra Quick Chicken Caesar Salad

This made an incredible lunch. The chicken came pre-grilled and seasoned. I warmed it up quickly in my skillet, because I have an aversion to cold meat, unless it’s deli meat. Mix up the salad bag (absolutely loved that they sent shredded lettuce instead of bigger lettuce pieces), tossed the Caesar dressing and topped with chicken. Made the whole thing in about 10 minutes and had the most satisfying lunch on a random weekday in my kitchen. Really improved the rest of my day to eat such a balanced lunch.
