Looking for the perfect drink to brighten up your brunch table, impress guests during mocktail hour, or cool off on a hot summer day? This Rosemary Grapefruit Fizz is a vibrant, citrus-forward mocktail with a lightly herbal twist thanks to a homemade rosemary simple syrup. It’s bubbly, refreshing, and full of fresh juice flavor, combining grapefruit juice, lime juice, and a touch of soda water for that satisfying sparkle. Whether you’re participating in Dry July, planning a Valentine’s Day brunch, or love a non-alcoholic grapefruit cocktail, this drink has the color, taste, and flair to wow. It’s one of my favorite ways to enjoy fresh juices during this time of year!

This grapefruit rosemary drink combines everything we love about fizzy herbal drinks and citrus mocktail ideas. With the essence of rosemary simple syrup, the brightness of lime grapefruit spritzer, and the elegance of a grapefruit soda mocktail, it’s an ideal choice for fans of a non-alcoholic grapefruit cocktail. It’s especially loved during the holiday season for its festive presentation and is often called a grapefruit rosemary paloma minus the booze. If you’re looking for a refreshing summer mocktail or something elegant for Sunday brunch, this one fits the bill.
The Chemistry of Rosemary Grapefruit Fizz
This mocktail hinges on balance – you’ve got the bitterness of grapefruit, the acidity of lime juice, and the herbal bite of rosemary, all tied together with sugar in a simple syrup. The key is to use medium-high heat when infusing the syrup, so the rosemary flavor extracts entirely without becoming overpowering. Boiling the mixture reduces the water content, intensifying the sweetness and thickness, which helps it distribute evenly throughout the drink. Straining the juice removes pulp, creating a clean, bubbly drink that tastes as crisp as it looks. Lastly, topping with sparkling water or club soda adds fizz, but be sure it’s fresh from a cold bottle- soda water goes flat fast.

Recipe Troubleshooting
One common issue is using too many rosemary sprigs or letting them heat for too long, which can result in an overly earthy, bitter drink. The trick is to boil for only 5-10 minutes, then remove the sprigs.
If the grapefruit-to-lime ratio is off, the drink can become too sour. Adjusting with a bit of extra sugar syrup can help bring balance.
If your drink is too sour, consider that your grapefruits are notably tart. You can adjust the sugar syrup slightly or use a bit of lemon juice instead of lime.
Some find the drink not sweet enough; this can be solved by adjusting the syrup-to-juice ratio.
When the fizz is underwhelming, it’s usually due to flat club soda or tonic water that has been left open for too long.
Fizz can fade fast when the ice cubes or soda sit out before serving.
Be sure to add soda water last and serve immediately for the best bubbles.
If you don’t reduce the syrup enough, the flavor can be weak or inconsistent.
Forgetting to strain the pulp from the juice can affect the smooth texture of the drink.
Can I use bottled grapefruit juice? Fresh is best, but bottled works if it’s 100% juice with no added sugar.
How long do I steep rosemary? 5-10 minutes is plenty over medium heat.
Can this be made ahead? Yes, make the rosemary simple syrup and juice ahead of time, but wait to add to soda water until serving.
What’s the best soda for fizz? Chilled sparkling water, tonic water, or club soda are all suitable options; avoid sweetened varieties.
Can I batch this for a party? Store the base in a cocktail shaker or pitcher and top with soda water right before serving.

Serving Suggestions
This mocktail is a trending summer mocktail for 2025 and a popular spring citrus beverage. With the rise of the sober curious lifestyle, it’s also popping up in mocktail hour recipes and non-alcoholic brunch drinks. Whether for dry holiday cocktail alternatives or easy recipes for fun party drinks, this one’s become a staple. It also resonates with herb-infused mocktails and alternative grapefruit gin fizz cocktails. Its bright pink hue makes it ideal for Valentine’s Day and Easter gatherings, while its citrus base also ties into New Year’s detox drinks.
Serve this mocktail in a champagne flute or tall Collins glass filled with crushed ice for a crisp, elegant look. Garnish with a sprig of rosemary and a twist of grapefruit peel. To dress it up, rim your glasses with sugar and lime zest. For food pairing, try goat cheese crostini, shrimp skewers, or even lemon-rosemary chicken. Use a clear glass pitcher for parties so the color shines through, and let guests build their own drinks with pre-prepped components. Add pink drinks flair by using ice cubes made with edible flowers or citrus slices for a touch of wow.
The best way to serve this mocktail is icy cold in tall glasses, accompanied by elegant garnishes. Pair it with light fare, such as citrus salads, rosemary focaccia, or even avocado toast. Want a pretty presentation? Add grapefruit peel ribbons or serve with paper straws for a retro vibe. Hosting a party? Line a cooling tray with dry ice underneath a punch bowl for a foggy, mystical look.

Storage Tips
The simple syrup can be made ahead and stored in an airtight container in the fridge for up to a week. The citrus juice blend can also be made a day in advance and stored in the refrigerator. Don’t combine with soda water until just before serving to keep the fizz alive.
Freezer– I don’t recommend freezing the finished drink, but you can freeze the rosemary simple syrup in ice cube trays. Pop one or two into a glass of juice and soda for a quick mocktail with minimal effort- perfect for prepping ahead of a fun party or holiday cocktail alternative.
Making Ahead– Make both the rosemary syrup and juice blend the night before. Store each in a separate container. When ready to serve, add ice cubes and sparkling water. This makes it ideal for brunch buffets, bridal showers, or sober-friendly gatherings where drinks need to be ready to go without losing their freshness.
