The Chemistry of Smash Burgers
The magic of homemade smash burgers is all in the smash. Pressing the patty down on a flat surface over medium-high heat creates those signature craggy edges, locking in the flavor and forming the Maillard reaction (aka, that craveable crust). Using 80/20 ground beef ensures juicy centers with enough fat for flavor. And let’s not forget the sauce – bleding mayonnaise, ketchup, BBQ sauce, and pickle relish balances sweet, tangy, and creamy elements. It’s the best burger sauce for more than just burgers (yes, fries and onion rings love it too).

Recipe Troubleshooting
Not getting those crispy edges? That’s usually due to the skillet not being hot enough. Be sure your cast-iron pan or skillet is thoroughly preheated before smashing.
Patties sticking? Always use a big flat spatula or a cast-iron press and avoid moving the patty too early.
Special sauce taste off? Adjust with a touch of pickle juice or more sweet pickle relish.
Soggy buns? Lightly toast your brioche buns and layer ingredients carefully- lettuce at the base helps prevent the bottom bun from sauce overload.
How do I smash it without it falling apart? Smash while the beef is cold and gently press into a thin patty- don’t mash!
What’s in the special sauce? A mix of mayo, ketchup, BBQ sauce, and pickle relish-scroll for the recipe below.
Do I need a cast-iron skillet? While it helps, any heavy-bottomed pan will do – as long as it holds heat.
When do I season the beef? Mix seasonings into the meat before smashing for the best results.
Burgers too dry? This often comes from overcooking or using beef with too little fat. Stick to 80/20 for that juicy burger texture.
Is the sauce too sweet? Swap out the BBQ sauce for a spicier version or add a dash of Worcestershire sauce to balance it out.
Cheese doesn’t melt? Make sure to add it immediately after flipping the patty.

Storage Tips
Store leftover burger patties in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat for the best texture. Avoid microwaving unless necessary- it can zap the juiciness. Store extra sauce separately in the fridge and stir before using.
Freezer– Shape and season the patties, then freeze uncooked between layers of parchment paper. Thaw in the fridge overnight before cooking. The special sauce can also be frozen in a sealed container for up to one month-just stir well once thawed.
Making ahead– Make the sauce up to 3 days ahead and store it in the fridge. You can also shape the burger patties in advance and refrigerate them until ready to cook. Toast buns ahead and store in a zip-top bag at room temperature.
