The Chemistry of Berries & Cream Yogurt Popsicles

The magic of these popsicles lies in the combination of full-fat vanilla yogurt and granulated sugar. The yogurt provides a creamy base, while the sugar helps to sweeten and lower the freezing point, resulting in a smoother texture. By churning the yogurt mixture in an ice cream machine, we incorporate air, which prevents large ice crystals from forming and keeps the popsicle creamy. The addition of fresh berries not only adds natural sweetness and vibrant color but also introduces a refreshing burst of flavor with every bite.

What is in berries & cream yogurt popsicles?

Full Fat Vanilla Yogurt

Provides a creamy and rich base for the popsicles.

Granulated Sugar

One cup sugar sweetens the yogurt and helps achieve a smoother texture by lowering the freezing point. You could use less sugar, but it will raise the freezing point of your popsicles.

Chopped Berries

Add natural sweetness, vibrant color, and a refreshing burst of flavor to the popsicles.

How do you make berries and cream popsicles?

  1. In a medium mixing bowl add yogurt and sugar. Whisk until combined.
  2. Pour the mixture into an ice cream machine and churn it according to the manufacturer’s instructions.
  3. Once frozen, mix with chopped berries. I like to chop them with a handheld food processor or a high-speed blender.
  4. Scoop popsicle mixture into popsicle molds and freeze until frozen; this takes roughly 2-4 hours.
  5. When ready to eat, the popsicles can sometimes get stuck in the mold. If you run them under warm water for a few seconds, they will slip right out when you pull the popsicle sticks. Enjoy your summer treats all season long!

Storage Tips

Store your popsicles in an airtight container in the freezer to keep them fresh. For the best texture and flavor, enjoy them within the first few weeks, but they can be stored for up to 3 months.

These popsicles are best enjoyed within the first few weeks of making them. While they can be stored for up to 3 months (just long enough for all the summer months), the texture and flavor are optimal when consumed sooner.

Freezing Options

If you don’t have an ice cream machine, you can still make these popsicles by mixing the yogurt and sugar, folding in the berries, and then pouring the mixture directly into popsicle molds. Freeze until solid; although the texture might be slightly different, it will still be a creamy treat.

Making Ahead

These popsicles are perfect for making ahead of time. Prepare and freeze them a day or two in advance for a ready-to-serve treat. They’re great for summer parties or to have on hand for quick afternoon snacks.
