How do you make feta guacamole?

  1. Wash and slice the cherry tomatoes into quarters. Place them in a medium bowl
  2. Chop the red onion into tiny bits and add it to the bowl. I love to use a handheld food processor to chop these really fine.
  3. Grate the garlic & add with the tomatoes and onion
  4. Squeeze the fresh lime juice over the top and stir all the ingredients together
  5. Add the vinegar and stir again
  6. Chop up the cilantro and pour it into the bowl
  7. Dice the ripe avocados (don’t mash avocados) and place them in the bowl. Stir everything together.
  8. Top it all with the feta crumbles and fold it in.
  9. Cover the bowl and place in the fridge to chill for 30 minutes. This allows the flavors to meld.
  10. Serve with tortilla chips! Add a little salt or hot sauce if needed.

Storage Tips

To store, cover the leftover dip with plastic wrap, pressing it directly onto the surface to prevent air exposure, and refrigerate. It’s best enjoyed within 24 hours.

While guacamole is best enjoyed fresh, this version can be kept in the refrigerator for up to a day without significant loss of quality, thanks to the acidity which helps preserve the color and flavor.

Making Ahead

If preparing beforehand, you can mix all ingredients except the avocados and feta. Add these just before serving to maintain the best texture and freshness.

This guacamole is my favorite! The twist of feta cheese makes it an absolute show-stopper!

Ingredients 

  • 1 cup grape tomatoes
  • 1/4 cup red onion **chopped
  • 2 garlic cloves **grated
  • 2 tbsp fresh lime juice
  • 1 tbsp white wine vinegar
  • 1/4 cup cilantro **chopped
  • 5 large avocados
  • 4 ounce feta cheese
