The Chemistry of Mummy Rice Krispies

The gooey texture of these Rice Krispies treats comes from using extra marshmallows and browning the butter. Browning butter involves gently heating it until the milk solids caramelize, adding a warm, nutty flavor with hints of caramel. The butter’s fat content also helps keep the treats chewy and prevents them from becoming too hard as they set.

Ingredient List for Mummy Rice Krispies

Rice Krispie Cereal

Provides a crispy base with that satisfying crunch.

Browned Butter

Adds a rich, nutty flavor and enhances the gooey texture.

Mini Marshmallows

Adds sweetness and helps the cereal bind together, with an extra portion mixed in for a soft texture.

White Chocolate

Used for dipping and mummy decoration. You can also substitute with almond bark. Almond bark is a great alternative to white chocolate for coating the treats. It melts easily and has a smooth finish, ideal for creating mummy “bandages”.

Eye Sprinkles

Creates the mummy look; candy googly eyes are a fun, festive touch!

Step One: Start by browning your butter in a saucepan (see below for step-by-step browning instructions).

Someone’s stirring mini marshmallows in a saucepan. Nearby: rice cereal, candy eyes, and an open marshmallow bag on the counter.

Step Two: Add 12 ounces of mini marshmallows to the hot, browned butter and mix until melted.

Step Three: Once the marshmallows are fully melted, add 12 cups of Rice Krispies cereal to a large mixing bowl.

Step Four: Add the melted marshmallow to the Rice Krispies cereal and stir until combined.

Step Five: Stir until all the cereal is covered with melted marshmallow.

Step Six: Add 8 ounces of mini marshmallows to the warm Rice Krispies and fold in, leaving them whole.

Step Seven: Add the cereal treat to a prepared 9×13 pan (sprayed with non-stick spray and lined with parchment paper). Press into the pan until the treat is in an even layer.

Step Eight: Cool and then cut into even squares.

Step Nine: Melt the white chocolate in a microwave-safe bowl in the microwave slowly (30 seconds at a time) until smooth. Dip one side of the Rice Krispies in the melted white chocolate.

Someone’s holding a cracker covered in white sauce, with it dripping back into the bowl—kind of looks like mummy rice krispies.

Step Ten: Drip the leftover white chocolate off and then set it on a parchment paper to cool.

Step Eleven: Repeat until all treats are dipped in chocolate, and let them set.

Step Twelve: With the leftover melted chocolate, use a piping bag to pipe on wrapping like drizzles. Stick on two candy eyes. Let it sit before serving.

How do I achieve the perfect browned butter?

Mastering the art of browning butter can transform your cooking, making the process enjoyable and worry-free. Begin by placing your butter in a small saucepan over a medium flame until it melts completely. Shortly after melting, the butter will enter a boiling phase, accompanied by a series of popping sounds. These sounds are crucial cues during the browning process, so pay attention.

As the boiling continues, a thick foam will develop, yet the popping will persist. At this point, it’s essential to stay close and listen attentively. The moment the popping ceases, while at the same time the foam remains, it signifies it’s the time to remove the butter from the heat.

By gently stirring the butter, you’ll notice brown specks appearing through the foam, accompanied by a rich, nutty aroma. This indicates that your browned butter is ready.

Brown Butter is Best in Rice Krispies

Browning the butter gives it a caramel-like flavor, transforming a classic recipe into something gourmet and adding warmth and richness to each bite. I always prefer browned butter in my Rice Krispies treats to melted butter. It adds a whole other level of flavor.

Extra Soft Rice Krispies

Using extra marshmallows and melted browned butter makes the treats softer and gooier. Adding the marshmallows into two parts keeps some whole while enhancing the chewy texture.

Storage Tips

These mummy treats are best stored in an airtight container at room temperature for up to three days.

Refrigeration– You can refrigerate for longer freshness.

Freezing– These treats can be frozen if wrapped individually in plastic wrap and stored in an airtight container for up to two months. Thaw at room temperature before serving.

Making Ahead– You can make the rice krispie base a day in advance, then decorate it with melted chocolate and candy eyes on the day of your event.

These gooey, extra marshmallow rice krispie treats have a secret ingredient: warm and caramel-like browned butter. Dipped in chocolate and made to look like a cute, festive mummy!

Ingredients

  • 12 tbsp browned butter
  • 16 ounces mini marshmallows
  • 12 cups rice krispie cereal
  • 8 ounces mini marshmallows
  • 12 ounces white chocolate
  • eye sprinkles

Instructions

  • In a large bowl measure out the 12 cups of cereal
  • In a medium-sized saucepan, add the 12 tbsp butter and allow it to come to a boil. Once it is boiling, keep an eye on it. As soon as the butter froths up and stops making popping sounds, it is done and browned. If you stir the butter, you should see small brown flecks.
  • Add the 16 ounce mini marshmallows and stir until they are fully melted.
  • Pour the melted marshmallow mixture over the measured out cereal. Stir with a large wooden spoon until the cereal is covered.
  • Add the additional 8 ounces of mini marshmallows and fold them into the cereal mixture.
  • Pour the cereal treat out onto a large parchment paper. Press down to flatten to the thickness you desire.
  • Allow the treat to cool a bit before slicing.

Topping

  • Melt the 12 ounces of white chocolate in a microwave safe bowl in the microwave, heating 30 seconds at a time and stirring thoroughly after each heating.
  • Once the white chocolate is fully melted, dip the top of each rice krispie treat in the melted. Shake off any excess. Place the treat on parchment paper and allow the chocolate to set.
  • Once the first layer is set, drizzle the remaining chocolate on top of each treat to look like mummy wrappings.
  • While the second layer of chocolate is still wet, carefully place 2 eye sprinkles on each treat.
  • Allow to fully set before enjoying!
