The Chemistry of Oreo Frozen Custard
The secret to this creamy ice cream lies in the use of a custard base. The egg yolks help to thicken the mixture, creating a smooth and creamy texture. Using heavy cream and whole milk ensures a high-fat content, which helps prevent the formation of ice crystals and keeps the ice cream smooth and rich. The addition of a pinch of salt enhances the flavors and balances the sweetness. Ensuring your ingredients are at room temperature helps them blend more smoothly and evenly, resulting in the perfect ice cream mixture.

What is in Oreo frozen custard?
Heavy Whipping Cream
It is high in fat, making a creamy base for the custard. You can also use heavy cream, which is slightly lower in fat than heavy whipping cream.
Whole Milk
Another primary base for the custard provides richness and a creamy texture. I do not recommend using skim milk due to its low-fat content.
Granulated Sugar
Sweetening the custard base. The heat melts it down into a syrup, adding moisture to the ice cream. Sugar also helps preserve the ice cream naturally.
Egg Yolks
Act as thickeners and emulsifiers, making the ice cream smooth and creamy.
Vanilla Extract
When using pure vanilla extract, as opposed to imitation flavoring, it will add the deep rich flavor that everybody wants in a treat.
Fine Sea Salt
Enhances flavor, adds balance, masks any bitter flavors. Salt is the most powerful and oldest preservative. Always make sure to use fine sea salt so it melts down at the right speed on the heat of the stove. If you use larger granule salt, it will not melt down fully when cooked and will leave salt crystals throughout your ice cream.
Oreos
The star of the show! Crushed Oreos add texture and flavor, making this ice cream truly special.

How do you make Oreo Frozen Custard?
- In a medium saucepan, combine 2 cups of heavy whipping cream, 1 cup of whole milk, and 1 cup of granulated sugar. Place over medium heat and cook until simmering.
- While heating the mixture, take six egg yolks in a large bowl and whisk until they are a little lighter in color.
- Temper the egg yolks. Once the cream mixture is warmed, take a 1/4 measuring cup and slowly pour the cream mixture into the egg yolks while constantly whisking. Repeat this process 5 times to temper the egg mixture.
- Combine and thicken. Once the egg yolks are tempered, slowly pour the egg mixture back into the medium saucepan while constantly whisking. Add two teaspoons of vanilla extract and a pinch of salt. Simmer over medium-low heat until thickened, stirring constantly.
- Cool the mixture. Pour the thickened mixture into a bowl with a lid and place it in the fridge for 8 hours to cool, or longer if needed. This mixture can sit in your fridge for up to 2 days.
- Churn the ice cream. Once cooled, churn the mixture in an ice cream machine according to the manufacturer’s instructions until frozen. The churning process helps incorporate air, creating a creamy texture.
- Add Oreos. Scoop 4 to 5 large spoonfuls of frozen custard into a freezer-safe ice cream container. Drizzle 1/3 of the crushed Oreos over the custard. Repeat until all the frozen custard and toppings are used. Stir a few times with a flexible spatula to create a swirl.
- Freeze and serve. Place the custard in your freezer with an airtight lid on. Allow to freeze until solid; this takes about 4 hours. Scoop and enjoy your homemade Oreo ice cream!

How to Store Oreo Custard
Store any leftover ice cream in an airtight container in the freezer. It will stay fresh for up to 2 weeks. To prevent freezer burn, cover the surface of the ice cream with a layer of plastic wrap before sealing the container.
Making Ahead
You can prepare the custard base and store it in the fridge for up to 2 days.
