The chemistry of this casserole revolves around the egg and milk mixture. When baked, the proteins in the eggs coagulate, setting the custard around the bread and sausage. The bread soaks up this mixture overnight, ensuring every bite is moist and flavorful. The cheese melts and adds a rich, gooey texture, while the dry mustard adds a subtle tangy complexity to the dish.

Sweet or Savory?

For breakfast time, are you team sweet or savory? I have ALWAYS been team sweet since I was a little girl, but as I get older I am finding that I prefer a balance of both if possible. When I am having a holiday brunch or breakfast party, I love to make some Cinnamon Rolls and this Savory French toast. Then everyone is happy, team sweet, team savory & team both.

How long should you chill a French toast casserole?

Ideally, chill it overnight, or for at least 8 hours, to allow the bread to fully absorb the egg mixture. Chilling also allows the flavors to meld and makes your casserole more flavorful.

Can this casserole be made with different meats?

Yes, you can customize this casserole to what you like. This recipe is actually my Grandma Eleanors recipe, she always did sausage, so now I always do. I love having recipes tied to her, each one brings back memories of cherished family time. Another good option would be bacon. Just make sure to cook it fully first, you wouldn’t want to add raw meats to the casserole.

What type of bread do you use?

The beauty of this recipe is that you can use any soft bread you like. Every different bread type will bring a hint of different flavors, so choose your favorite bread. For me, I like to use what is on hand, and that is normally a store bought loaf of sandwich bread. If you wanted to go fancy, you could use a yummy bakery bread, like challah.

Savory French Toast Casserole

This savory french toast casserole is an easy overnight casserole that brings a delicious savory dish to any breakfast or brunch.

Ingredients 

  • 8 slices bread
  • 2 cups shredded cheese
  • 14 links sausage
  • 4 eggs
  • 2 3/4 cups whole milk
  • 1 tsp dry mustard
  • 1 can cream of mushroom soup

Instructions

  • Grease a 9×13 pan
  • Fully cook the sausage on the stove top and chop up
  • Tear the bread into chunks and place in the greased pan
  • In a bowl mix together eggs, milk, dry mustard & mushroom soup
  • Pour soup mixture over the bread pieces and sprinkle the chopped sausage links on top
  • Sprinkle on the shredded cheese over the casserole and fold all the ingredients together inside the pan
  • Cover the casserole with tinfoil and place it in the fridge overnight
  • In the morning, preheat the oven to 300 degrees.
  • Place the casserole in the oven uncovered and bake for 1 hour and 30 minutes
  • Once finished baking, allow to cool for 15 minutes before serving.
