If there was ever a cookie created for true chocolate lovers, this is it. These Mega Triple Chocolate Cookies are thick, rich, and absolutely packed with gooey chocolate in every bite. Made with dark chocolate, milk, and cocoa powder, they deliver that indulgent “bakery-style” feel right from your own oven.

With a soft center, crispy edges, and chunks of melty chocolate throughout, they’re everything you crave from a cookie-and more. Whether you’re making ultimate cookies for a party or testing out a chewy chocolate cookie for your personal recipe book, this one stands out. You’ll find this recipe popping up alongside searches for quadruple chocolate cookies in some sweet-toothed circles.

The Chemistry of Mega Triple Chocolate Cookies

The key to these cookies’ amazing texture lies in the flour combo- all-purpose flour gives them structure, while cake flour adds tenderness for that just-right chew. Using cold, cubed, unsalted butter keeps the dough firm, helping it maintain its shape as it bakes. Cocoa powder brings deep flavor (try Dutch-processed cocoa for a bolder profile), and cornstarch ensures softness. The balance of baking soda and baking powder gives them the rise and spread needed for the perfect chewy center with crispy edges. Don’t forget to let them rest after baking- this helps set the structure and enhances the chocolatey goodness.

Recipe Troubleshooting

Cookies spread too much? This often happens because the butter was over-softened or the dough wasn’t chilled enough (this recipe doesn’t require chilling if followed precisely).

Chocolate chips sink? It may be due to warm dough or uneven mixing.

How do I avoid overbrowning? Use parchment paper and a light-colored baking sheet to prevent.

Can I use room temperature butter instead of cold butter? Not for this recipe- the cold butter helps keep these cookies thick.

What’s the best cocoa powder? Use natural cocoa powder for standard flavor or Dutch-processed for something more profound.

How do I avoid dry cookies? Don’t overbake and measure your dry ingredients carefully using a kitchen scale.

What’s the point of cake flour? It makes the cookie softer and helps offset the richness of the chocolate.

Dough too wet? Check your measurements- if it’s humid or your butter was too warm, the dough can feel sticky.

Butter chunks didn’t blend well? Make sure you give it a quick mix on medium speed to distribute the cubes evenly.

Baking Tips

With a soft center, crispy edges, and chunks of melty chocolate throughout, they’re everything you crave from a cookie- and more. Whether you’re prepping for a Father’s Day dessert, looking for a TikTok viral cookie recipe, or need a sweet treat after a long day, these are the cookies that deliver. Make sure to stick to 12 even cookie dough balls and bake for exactly 13 minutes, letting them rest afterwards. If they didn’t turn out like chocolate overload cookies, make sure you’re using high-quality cocoa and a good mix of dark and milk chocolate chips. Cake flour is also essential to use as it makes the cookie softer and helps offset the richness of the chocolate.

Freezer- Portion the dough into cookie dough balls and freeze on a sheet pan. Once frozen, transfer to a zip-top bag and bake straight from frozen at 375°F for 14-15 minutes. Or freeze fully baked cookies, wrapped tightly in plastic wrap, and then bagged.

Make Ahead- This is a great make-ahead cookie dough! Prepare the dough up to 2 days in advance and refrigerate it in a large bowl wrapped in plastic wrap. When ready to bake, portion into dough balls and follow the instructions. You’ll get bakery-style cookies anytime you want.

Ingredients

  • 1 cup unsalted butter **cold and cut into cubes
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp fine sea salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 cup cake flour
  • 1/2 cup cocoa powder
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 1 bag dark chocolate chips
  • 1 bag milk chocolate chips

Instructions

  • Preheat your oven to 375 degrees.
  • In a stand mixer with the paddle attachment, add 1 cup of cold unsalted butter cut into small cubes, 1 cup brown sugar and 1/2 cup granulated sugar. Mix until combined. Its okay if the butter is still a bit in tiny cubes.
  • Fold in 2 eggs and 1 tsp vanilla extract.
  • Add the dry ingredients: 1 tsp fine sea salt, 1 tsp baking soda, 1 tsp baking powder, 2 cups all-purpose flour, 1/2 cup cake flour, 1/2 cup cocoa powder, and 1 tsp cornstarch. Mix on low speed until a dough forms.
  • If you can still see cubes of butter, turn the mixer on medium speed and beat for 30 seconds to break them up into the dough. Do not go over 30 seconds, though, or else it will be over-mixed.
  • Fold in the bag of dark chocolate chips and the bag of milk chocolate chips.
  • Line two light-colored metal cookie sheets with parchment paper.
  • Break the dough into 12 even pieces and roll into balls. You can eyeball and cut the dough or use a kitchen scale.
  • Place 6 large cookie dough balls onto each sheet. Leaving a good amount of space between each.
  • Place the cookies in the oven and bake for 13 minutes.
  • Remove and allow the cookies to rest on the pan for 5-10 minutes to set.
  • Remove and enjoy!
