Elevate your baking creations with this silky smooth white chocolate frosting. This luscious frosting is a harmonious blend of melted white chocolate and rich, creamy butter, complemented by the sweetness of powdered sugar. It’s a versatile frosting that pairs wonderfully with cakes, cookies, brownies and more, adding a touch of elegance and indulgence to your favorite desserts.
As a dessert enthusiast, I cannot just use plain old buttercream for every frosting need. Adding white chocolate totally transforms your buttercream, as it adds a creamier texture and a white chocolate richness.
The Chemistry of Frosting
The beauty of this frosting lies in the delicate balance and emulsion of its ingredients. The white chocolate, when gently melted with cream, forms a smooth and rich base. The addition of unsalted butter provides a creamy, velvety texture. The powdered sugar adds sweetness and stability. When simply mixed together, this combination is decent, but then, when whipped for 2 minutes on high speed, the incorporation of air bubbles makes this frosting unbeatable. Did you know that air bubbles are an important ingredient to your baked treats and frostings? Without them, your baked treats won’t end up as puffy and soft, and your frosting will end up tasting more like butter.
Why melt the white chocolate with cream?
Melting the white chocolate with cream helps to create a smooth, easily blended mixture that incorporates well into the butter and sugar, resulting in a smooth and spreadable frosting.
Can this frosting be made ahead of time?
Absolutely! You can prepare this frosting in advance and store it in the refrigerator. Just bring it to room temperature and give it a quick whip before using for the best texture.
How do you achieve the perfect texture for frosting?
Mixing the frosting on medium-high speed for 2 minutes is crucial. This process incorporates air, making the frosting lighter in color and fluffier in texture. Looks great and tastes great!
Can you use this frosting for piping decorations?
Yes, this frosting has a great consistency for piping. It holds its shape well, making it ideal for decorating cakes and cupcakes.
What is in white chocolate frosting?
White Chocolate Chips
Made of milk, sugar and cocoa butter. No actual cocoa solids are used in white chocolate. White chocolate is sweeter than milk or dark chocolate.
Heavy Whipping Cream
Makes a softer, more spreadable frosting. When melted with chocolate it adds more fat and moisture to the mixture, resulting in a silkier blend.
Unsalted butter
Often the main ingredient of frosting, it adds structure to your buttercream. It also adds a smooth and velvety texture. Butter melts at body temperature, so it will make your frosting have a melt-in-your-mouth sensation.
Powdered Sugar
Is just finely ground granulated sugar. It will absorb moisture in your batter or dough. It dissolves easily, ensuring a smooth texture without grittiness. Because it is so fine, it can melt quickly in the oven and spread cookies out more. Powdered sugar also stabilizes and thickens the frosting, thanks to the small amount of cornstarch it contains.
How to store buttercream
Store the frosting in an airtight container in the refrigerator for up to a week. You can also freeze it for up to 3 months. Thaw in the refrigerator and then re-whip before using. Wherever you store your frosting, it’s best to let it sit at room temperature for a couple hours before whipping and using. Otherwise it will be much too cold and subsequently solidified.
