The Chemistry of Chocolate Creami Ice Cream

This recipe works thanks to the balance of chocolate milk (especially one like Fairlife that’s higher in protein and fat) and heavy cream. This cream boosts richness and helps reduce ice crystals, while the milk provides sweetness and body. The Ninja Creami machine uses its spinning function to churn ice cream from frozen bases, creating that creamy ice cream texture without needing guar gum, xanthan gum, or added stabilizers. For best results, you want the base frozen solid and flat on a flat surface to ensure smooth processing.

Recipe Troubleshooting

Some people find their ice cream turns out icy or chalky– usually from not enough fat content or skipping the re-spin button.

Others might forget to freeze the base on a flat surface for at least 8 hours, which leads to an ice cream base that’s not cold enough to process well.

Sometimes the mixture separates or fails to blend, especially if the ingredients aren’t well-mixed.

If you’re not getting the perfect texture and flavor, try adjusting with a pinch of salt, chocolate chips, or a splash of vanilla extract during the first spin or re-spin function.

Can I use protein shakes instead of chocolate milk? Absolutely- it’s a great way to increase protein.

How long do I need to freeze the base? At least 8 hours.

Do I need to re-spin it? If it looks crumbly, yes.

Can I add peanut butter cup pieces or dark chocolate as mix-ins? Yes, after the first spin.

What’s the best way to store leftovers? An airtight container wrapped in plastic wrap prevents freezer burn.

If your ice cream is too icy– add more heavy cream next time.

It wasn’t sweet enough. You might want to use chocolate milk with added sweetener or mix in a bit of brown sugar.

It melted too fast– check your freezer temperature or eat it sooner after spinning.

Not enough chocolate flavor– Try mixing in cocoa powder or a drizzle of melted chocolate.

It overflowed in the machine– Don’t fill past the max fill line in the Creami canister.

Storage Tips

Transfer any leftovers to an airtight container wrapped in plastic wrap to prevent freezer burn. Store in the freezer for up to 3 months. Allow to thaw slightly before re-spinning or eating.

Freezer– Freeze the base in advance in a Creami canister for up to 3 months. Once spun, leftovers can be stored frozen and re-spun for a fresh texture at any time.

Make Ahead– Mix the ice cream base the night before and freeze overnight. You can even prep multiple pints with slight variations, such as adding coconut milk, vanilla extract, or sweetened cocoa powder, for easy flavor swaps.
