Strawberry sorbet made with maple syrup is an excellent option for a dairy-free frozen treat. Using simple ingredients like frozen fruit and a small amount of sweetener yields a creamy consistency. The food processor helps with a smooth texture, while a freezer-safe container keeps leftovers fresh. Add lime juice for zing and use fresh strawberries for the best results. Whether you’re looking for a healthy treat or a delicious recipe with vitamin C, this is the perfect dessert.

The Chemistry of 2-Ingredient Strawberry Sorbet

The key to achieving a smooth texture in sorbet is the use of sugar. In this recipe, maple syrup not only adds a bit of sweetness, but it also acts as a natural softener, preventing the sorbet from becoming icy or rock-hard. When paired with the natural pectin and water content in strawberries, the result is a dessert that churns into a creamy consistency- even without any dairy. The Ninja Creami machine uses high-speed spinning to incorporate air and break down ice crystals, mimicking traditional churned ice cream.

Recipe Troubleshooting

Some people find that their sorbet ends up with an icy or gritty texture; that’s usually because the fruit wasn’t blended thoroughly or the base didn’t freeze flat.

Another reason the sorbet can turn icy is due to under-processing or insufficient addition of sweetener. Remember, the syrup is an inverted sugar that will soften the mixture.

If your mixture is too hard to spin, it could be that it wasn’t frozen on a level surface.

Others notice that the flavor is either too tart or too sweet, depending on the ripeness of the strawberries. Sweetness can vary, so always taste your fruit and adjust accordingly.

If your sorbet lacks flavor, the strawberries may not be ripe enough.

Not giving it a full 24-hour freeze can lead to spinning errors in the Ninja Creami.

Can you use fresh strawberries? Yes, this recipe calls for fresh strawberries! Blend them well before freezing.

Maple syrup, as a sweetener, works well, but honey or agave can be used as alternatives.

To make it even creamier, some folks add a tablespoon of Greek yogurt.

You can add a splash of lemon juice for brightness.

Can it be made without an ice cream maker? You’ll need a food processor and a loaf pan, but the Ninja Creami gives the best results.

Some also find that after remixing, the sorbet is still too firm– it’s best to let it sit at room temperature for a few minutes, then remix.

Seasonal Serving

This is a hot day favorite, perfect for making TikTok trends and featuring summer fruit desserts. It’s a must-have at Memorial Day gatherings, and with the ease of using an ice cream maker like the Ninja Creami, it’s no wonder this new recipe has become a staple for 2025 summer recipes. Store it in an airtight container and enjoy it during backyard BBQs or as a sweet snack on hot summer days.

Serving Suggestions

For a refreshing presentation, scoop the sorbet into chilled dessert cups and garnish with mint, lime zest, or fresh strawberries. Serve in a hollowed-out lemon for extra flair. Pair it with coconut crisps or shortbread cookies, and add a splash of lemon juice or sparkling water for a fizzy float. This makes an ideal finish to a grilled meal or an elegant dessert. You can also use this to create a healthier version of my strawberry ice cream pie.

Try topping your sorbet with crushed pistachios, toasted coconut, or dark chocolate chips. For a brunch treat, serve alongside strawberry scones or yogurt parfaits. For parties, portion into mini cups for grab-and-go enjoyment. Add a drizzle of maple syrup or a dollop of whipped cream for an indulgent touch.

Storage Tips

Store leftover sorbet in an airtight container in the freezer for up to two months. Flatten the surface to prevent ice crystals from forming and place a piece of parchment paper over the top to minimize freezer burn.

You can re-freeze directly in the Creami pint. If too firm when serving later, let it sit at room temperature for 10 minutes and remix.

Making Ahead– This sorbet is perfect to prepare the night before. Make sure it has a full freeze and your Creami is ready to spin. Store in a Creami pint for easy remix access.
