There’s something undeniably opulent about dark chocolate. Its rich, intense flavor, coupled with smooth, melt-in-your-mouth texture, makes it an irresistible treat for any chocolate connoisseur. This dark chocolate fudge recipe elevates the humble fudge to a gourmet level, offering a perfect balance of sweetness and depth, making each bite an indulgent experience. Whether you’re doing you budget or planning for the week, I find this dark chocolate to be an excellent companion.
The chemistry of fudge
The key to its velvety texture lies in the sugar crystals. By heating sugar with evaporated milk and butter, then cooling it rapidly, we encourage the formation of tiny sugar crystals. This gives fudge its firm yet creamy consistency. The addition of dark chocolate chips introduces cocoa solids and butter, which melt into the mixture, adding richness and smooth texture. The mini marshmallows, with their gelatin and sugar content, further contribute to the fudge’s soft yet stable structure.
Can I use regular milk instead of evaporated milk?
It’s best to stick with evaporated milk because of its reduced water content, which is crucial for the right texture.
How do I know when the fudge mixture is ready?
The mixture should be smooth and well-combined, with the chocolate and marshmallows fully melted into it.
Why is my fudge too soft or hard?
This is often a result of the cooking temperature. Too soft is not cooked enough and too hard is overcooked. With this simple fudge, you want to stop cooking as soon as everything is melted and smooth. With more complex candies, you want to use a candy thermometer.
Can dark chocolate fudge be made vegan?
Yes, by using plant-based butter, dairy-free dark chocolate, and marshmallows without gelatin.
What is in dark chocolate fudge?
- Evaporated milk: Provides a concentrated milk flavor and the right moisture content for smooth fudge.
- Unsalted butter: Adds richness and helps in the fudge’s creamy texture.
- Granulated sugar: The foundation of fudge, providing sweetness and structure.
- Dark chocolate chips: Offer a deep, intense chocolate flavor and contribute to the fudge’s creamy texture.
- Vanilla extract: Enhances the overall flavor profile.
- Mini marshmallows: Aids in creating soft, melt-in-your-mouth texture.
How to store dark chocolate fudge
Store the fudge in an airtight container at room temperature for up to 2 weeks. If you live in a very warm climate, you may want to refrigerate it to prevent softening.
Can you freeze fudge?
Dark chocolate fudge can be frozen for up to 3 months. Wrap it tightly in plastic wrap and then aluminum foil to prevent freezer burn.
Can you make this fudge ahead of time?
This fudge is a perfect make-ahead treat. You can prepare it several days in advance of your event or gathering, ensuring it’s well-preserved and ready to be served when needed.
