This Brown Butter Apple Cake is the kind of dessert that makes you close your eyes with that first bite- moist, spiced, and just the right amount of sweet. Between the fresh apples, apple butter, and browned butter cream cheese frosting, it’s the apple dessert equivalent of a warm hug.

This moist apple spice cake is infused with warm cinnamon, nutmeg, and clove- the kind of cozy apple butter cake recipe you’ll want on repeat all fall long. Topped with luscious brown butter frosting, it’s everything a spiced apple cake with cream cheese icing should be: rich, nostalgic, and full of fresh apples and incredible flavor.
The Chemistry of Brown Butter Apple Cake
Let’s talk chemistry for a second. When butter melts and browns, the milk solids caramelize, creating that nutty aroma and deep flavor that makes everything taste fancy. The sour cream and apple butter add richness and moisture, while the baking powder helps the cake batter rise just enough for a soft, tender crumb. Using fresh apples (grated, not chopped) adds both texture and natural sweetness. And that browned butter frosting? It’s magic. The contrast between the tangy cream cheese and the caramelized butter balanced the sweet apple cake perfectly.

Recipe Troubleshooting
Too much moisture? Grated apples can release a ton of juice, which makes the cake batter too wet and leads to soggy layers. Try lightly pressing them with paper towels before adding.
Uneven baking? Make sure your pans are on the middle position rack and rotate halfway.
Frosting separates? The browned butter was probably too warm; let it cool to room temperature before mixing.
Apple flavor didn’t come through? Try adding a tablespoon of apple cider or extra apple butter.
Frosting too sweet or soft? Reduce confectioner’s sugar or add more cooled brown butter.
Cake fell apart when frosting? Warm cake + soft frosting = slippery disaster. Cool both completely before stacking.
Can I bake this in a 9×13 pan? Yes! It will take a little longer, but it’s a great easy fall cake recipe version.
What apples work best? Use firm, crisp apples like Granny Smith or Honeycrisp.

Step One: Mix all of the dry ingredients in a separate mixing bowl.

Step Two: Combine the melted butter and brown sugar in a large mixing bowl. Mix until combined.

Step Three: Add the eggs and vanilla extract. Mix until combined.

Step Four: Add the apple butter and sour cream. Fold until combined.

Step Five: Whisk until smooth.

Step Seven: Mix until a batter forms.

Step Eight: Peel and grate the apples into the batter.

Step Nine: Fold until thoroughly combined.

Step Ten: Divide into three nine-inch cake pans prepared with non-stick spray and parchment paper.

Step Eleven: While the cake bakes, prepare the frosting.

Step Twelve: Boil and brown the butter in a sauce pan.

Step Thirteen: Remove from butter as soon as browned.

Step Fourteen: Add the brown butter and cream cheese to a mixing bowl. Combine.

Step Fifteen: Add the powdered sugar and vanilla extract to the mixing bowl.

Step Sixteen: Beat until smooth.
Serving Suggestions
This cake goes with just about any fall drink, like a cup of coffee, hot chai, drinking chocolate, frozen hot chocolate, or sparkling cider. If you want to dress it up a bit, drizzle with caramel sauce and sprinkle with chopped toasted pecans or walnuts for some crunch. A few thin slices of apples are brushed with lemon juice and dusted with cinnamon sugar for a simple but very pretty garnish.
This cake shines as both a show-stopping holiday dessert and a cozy weekend bake when you just want something sweet. To really make the cake rustic vibe come out, you can serve it on a rustic wooden cake stand with mini pumpkins or cinnamon sticks around the base to hit home the seasonal touch.
And if you really want to switch things up, serve it slightly chilled- the brown butter frosting firms up and becomes almost fudge-like. For an indulgent dessert, serve with a scoop of vanilla ice cream, chocolate frozen custard, or a large spoonful of fresh whipped cream on top.
