If you’ve ever been stuck deciding between tacos or burgers, this is your sign to stop choosing. These smash burger tacos are one of those crispy recipes that brings together the best of both worlds.

It’s essentially cheeseburger tacos made simple, delivering big flavor with minimal effort.

Step-by-Step Instructions

All the fixings for smash burger tacos—beef, tortillas, cheese, veggies, pickles, sauces—are spread out on the table.

Start by gathering your ingredients.

Someone's mixing sauce in a bowl by ground beef, shredded cheese, spice jars, and some street taco tortillas on the counter.

Step One: Add all the ingredients for the sauce in a bowl (mayonnaise, ketchup, bbq sauce, pickle relish) and whisk to combine.

Step Two: Place a skillet on the stove over medium-high heat.

Step Three: In a mixing bowl combine the ground beef, salt, and pepper. Mix until combined.

Step Three: Seperate the meat into 8 even balls.

Step Four: Working in batches of 2, place a ground beef ball on the skillet and press with your burger press until the burger is thin.

Step Five: Place the tortilla on top of the flattened burger. Cook for 3 minutes.

Someone’s holding a spatula with a corn tortilla over a pan, while another tortilla cooks with beans and cheese—yum!.

Step Six: Pick up the burger & tortilla using a spatula, sprinkle on a tbsp of grated cheese on the pan.

Step Seven: Flip the burger and tortilla, so the tortilla is down in the skillet now, right on top of the grated cheese (this makes the taco extra crunchy on the tortilla). Add a slice of American cheese. Cook an additional 2 minutes or until the burger is browned and crispy.

Step Eight: Remove, top with your toppings and burger sauce. Fold in half and serve.

Serving Suggestions

Serve these hot off the skillet with extra burger sauce drizzled inside for maximum flavor. If you are looking for a bit more heat, try myjalapeño aioli inside instead. Pair them with a side of my homemade French fries or my crispy garden salad if you are looking for color and balance. Add pickles or jalapeños for crunch and contrast. Presentation-wise, stack the tacos slightly open on a tray so you can see all the layers, or wrap them in parchment paper for that street-food vibe. Bonus idea: try making homemade shells for an even more elevated version. If you’re looking for a refreshing drink option, try my virgin piña coladas or my bubbly pineapple coconut spritzer for something sweet and fun. For dessert, serve up a light,dairy-free Dole Whip that everyone will love, especially the kids!

The Chemistry of Smashed Burger Tacos

The magic here is all about high heat and surface contact. When you press the ground beef into a thin layer on a hot skillet, you create maximum contact with the pan, which leads to that signature crispy crust- also known as the Maillard reaction (aka flavor magic). Using an 80/20 ground beef ratio gives you just enough fat to create juciness while still allowing the edges to crisp up. Cooking the tortilla directly on the skillet after flipping lets it absorb just enough flavor without becoming soggy- if done right. Timing is everything: too long, and the tortilla burns; too short, and the cheese doesn’t melt.

Recipe Troubleshooting

Do I need a cast-iron skillet? Not required, but it definitely helps retain heat for better results.

What tortillas work best? Flour works best, but you can use corn tortillas if you prefer- just expect a slightly different texture.

Burger didn’t get crispy? It always comes down to low heat or not smashing thin enough.

Tortillas getting greasy? This means not enough fat was drained, or the pan was overcrowded.

Tacos falling apart? That’s usually from overstuffing or uneven cooking.

Cheese didn’t melt properly? It likely needed another minute on the heat.

Storage Tips
