The Chemistry of S’more Cereal Bars

The key to achieving the perfect s’more cereal bar is the browned butter, which adds a rich, nutty flavor. Browning the butter until it has small brown flecks enhances the depth of flavor in these bars. Using a medium-sized saucepan ensures even melting, and combining the ingredients while warm helps everything meld together perfectly. The butter solids caramelize, adding a complex flavor that pairs beautifully with the sweet mini marshmallows and chocolate.
