How do you make soft scotcharoos?

  1. Prepare the cereal. Measure 5 3/4 cups of rice cereal into a large bowl and set aside.
  2. Cook the peanut butter mixture. Combine 1 cup corn syrup (also known as Karo Syrup) and 1 cup granulated sugar in a medium saucepan over medium heat. Stir frequently until the sugar dissolves and the mixture is smooth. Do not let it boil.
  3. Add the peanut butter to the corn syrup mixture. Remove the saucepan from heat and stir in 1 cup of creamy peanut butter until thoroughly combined.
  4. Mix with cereal. Pour the peanut butter mixture over the rice cereal and gently stir until the cereal is evenly coated. Avoid over-mixing to keep the cereal’s texture intact.
  5. Melt the chocolate and butterscotch. Combine 2 cups butterscotch chips and 2 cups milk chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until the mixture is smooth and melted.
  6. Press the cereal mixture. Grease a 9×13-inch baking dish with non-stick spray and line with parchment paper. Press the cereal mixture evenly into the dish.

Soft and Chewy Scotcharoos

Everyone loves a tasty and soft scotcharoo, especially when they are soft and chewy!

Ingredients 

  • 1 cup karo syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 5 3/4 cups rice krispie cereal
  • 2 cups butterscotch chips
  • 2 cups milk chocolate chips

Instructions

Rice Krispie Treat

  • Measure out cereal into a bowl
  • Add karo syrup, sugar & peanut butter to a medium sauce pan and place on medium heat
  • Stir as it melts down, once melted and smooth, take off heat
  • Pour peanut butter mixture over cereal, stir until completely coated (don’t over stir)

Topping

  • Measure out chocolate & butterscotch chips in a glass bowl
  • Place in microwave for 30 seconds
  • Stir, repeat 1-2 more times until chocolate mixture is melted and smooth

Assemble

  • Pour the cereal mixture into a 9×13 pan greased and lined with parchment paper
  • Pour the chocolate mixture on top and spread into an even layer with an off-set spatula
  • Allow the chocolate to harden fully before slicing. Enjoy!
